I think that we should go with something light, even for the main distribution. LXDE is light and full featured. Light Desktop Environments cause Linux to be faster(even on the latest hardware and the oldest hardware).

Cinnamon is MATE, but better in my eyes. MATE is a continuation of GNOME 2. Cinnamon is what GNOME 3 should have been. So I voted for Cinnamon for the main edition.
Mate for the default. It's easily customized, light, familiar, and mostly accessible to people with disability. This last point is a high priority to Runin.

+1 for LXDE , it is lightweight and as good as XFCE (if not better)
but XFCE is dead so LXDE is a way to go ;-)

personally i think it should be xfce as the mini and gnome is fine for default, but all others should be available on dvd/net install.

LXDE/LXQt is the way to go! At least for the Trisquel Mini edition.
