I know I am in the minority but I like mine REALLY rare...my sister was a food science major in college and has lectured me repreatedly on the dangers but I can't help myself. I haven't gotten sick yet (knock wood) and I just love the barely cooked ones. That being said - here in Texas they are hard to come by bc of state regs - I can only think of 4 places here in Dallas that will un-cook them to my liking :)

Well, I work in the meat industry and to sum up my feeling on undercooked burgers "e-coli". I think it's a state law here in Nebraska, they don't even ask you how you want it cooked. It's well done or nothing. Steak on the other hand... Best steaks in the world, right at my grocery store
It really depends though! If I'm in some awesome hole-in-the-wall joint I like medium-well but if I'm eating some froufrou gourmet burger I like med rare.
