as a general rule i like a mild cheddar or american, but i opted for cheddar for the purposes of this poll (but it was close)... when i want a change of pace i like havarti ALOT (melts nicely and has a nice bite without overpowering the burger like stronger cheeses can).
there's something quite essential to me in the choice of american. it melts the most evenly and has a less complex flavor than the others-- allowing one to focus on the taste of the meat without overshadowing it.

I usually have American or cheddar, but I love bleu cheese on a burger.

I want a cheese with flavor. American is just for melting, not for eating right????
It really depends! If I'm eating some froufrou wagyu beef med-rare burger at a restaurant, I want blue or something fancy to match. But if it's a delicious, greasy hole-in-the-wall kind of burger I want American.
