Thin wave is good. It would be great if you could achieve something similar to Northern Okinawa's soba-men. Generally North of Manzamo, the noodle is flat with a wave. It allows the soup to absorb into the noodle. This will make for a more velvety type texture and add to the flavour of the noodles.
