    Nick,
    I wrote you recently asking if you knew how to make homemade pasta that doesn't get mushy or soggy when you cook it. Some people attribute this to the egg in homemade pastas. Anyway, I am really interested in making ravioli, but regardless of what you decide on, if you can, please discuss the mushy factor and what I can do to avoid it. Thanks.
