What length triathlon do you think I should do?

    Can you postpone the decision?

How about doing the Sprint on Sept 24 with me and see how it feels, continue to train as though you're going to do the Olympic, but definitely leave yourself the option of "settling" for the Sprint. You will still have done something truly significant by training for that, plus a non-trivial contribution to the cause via fundraising...and you can challenge yourself in the Sprint by working toward a faster time than you are "comfortable" with.

I'm definitely in the "don't kill yourself" camp. If you do the sprint and it feels easy, you can do the bigger one another time! The only way I'd recommend registering for the Olympic is if you could let yourself "downsize" to the Sprint closer to the event without feeling bad about it....Could you do that?
