Two would be very sweet. I put three because at one end I have two twin screw Veritases and a German pattern vise on the other end. Do others have comments on theirs.

I have two wood working vices, a tail and front vice as well as a mechanics vice foo other jobs.
This is a typical question someone from a consumer based economy would ask. How many? Rather than "do you have sufficient systems in place to meet all of your clamping needs?"
I have no bench and no vises but still could answer the above question in the positive.
Focus on needs, not on owning the most of anything.

I actually have 2 vises, a front and tail vise, but the Moxon vise essentially sits on the bench permanently.

I have a Veritas bench with the twin screw vise and side vise. I don't really care for either of these. I'm looking forward to building the Roubo bench with the Benchcrafted vises. I built the Moxon vise and absolutely love it and highly recommend it.

I have three and I pretty much hate all of them. I need to rethink my vise situation because of the placement of my bench and how I use it.

No room for a workbench in my shop Tom. I do my assembly & such either on my Unisaw or outside the shop. I had a workbench, but the shop is so small I wound up using it to store stuff on so I just got rid of it. I do have a Zyliss vise for when it is needed.
