Does decorating your camera with spots of coloured bling count? I put some spots of coloured, self-adhesive glass on my Canon G1X to relieve the overall, rather boring, blackness. I can see the shudders from purists now.
I get the impression that a lot of the stuff on modern digital cameras is there to appeal to computer geeks, and I don't regard myself as being one of them.
The degree of customization varies wildly some have been PHYSICALLY modified, not just reconfigured.
Removal of the hot mirror is probably the most significant modification I've done to the camera itself. Lenses get modified sometimes too :)
On a modern camera there is so much to switch OFF before it is fit for use...
